In Brattleboro, VT, the coolest small town in the U.S.A., we’re running a small-batch bakery creating outrageously awesome gluten and grain-free pizza and bread. And you might ask, how did this happen? Well, we’ve never really believed in the status quo, so we started making great products using simple ingredients that everyone can pronounce to create delicious food that people can’t stop talking about. Funny that the simplest approach can go against the grain of the rest of the food system, but that’s just how we roll.

The Challenge

Long before gluten-free diets became a trend, we were already experimenting with grain-free baking. Our goal was to outdo the conventional baking industry and create products that we’d be proud to pass on to our children. We didn't want to settle for the rubbery and flavorless results of ready-made mixes, so we took it upon ourselves to develop gluten-free food products that were made purely from natural ingredients. We refused to use any questionable chemical additives like xanthan or guar gums in our recipes.
